Four o'clock on a Saturday.
The host opens the table plan for tonight's two sittings.
The first sitting shows twenty-two covers already allocated to real tables; three two-tops by the bar are marked as walk-in only and stay empty on the plan.
A booking comes in online for six at seven-thirty: the system joins tables eleven and twelve, checks the pacing limit for that quarter hour, confirms, and because the party is above the deposit threshold it holds a card and tells the guest what happens if they do not arrive.
A reminder went out this morning to every first-sitting booking; one party replied to cancel and their table has already been offered to the first name on the waiting list.
